When we got our hands on a very new, very unique version of Simcoe and Mosaic, we knew Entropic would be the perfect vehicle to test them. We’re particularly excited because there is no other wet hop like these and few others have used them- and now we’re ready to share the results with you. Say hello to Wet Hop Entropic.

To best experience our hypothesis of the Big Chill, you’ll want to start with a pint of Entropic as a baseline and then follow it with a pint of Wet Hop Entropic. You’ll notice fruit beyond the citrus, embracing subtle notes of berry and red currant. There is no better way to experience the heat death of your thirst.

An indoor waterfall? Check. Recordings of howler monkeys from speakers that resemble coconuts? Double check. A perfectly placed Pan Am figurine? OK, it's time for Jet Pilot, our latest edition of Exotica.

If you don't know about the Jet Pilot cocktail, it's basically a daiquiri on acid. The citrus is split into lime and grapefruit. The sweet is split into cinnamon syrup and falernum. And the spirit is not just one but THREE different rums. A kaleidoscope of flavor.

None of these ingredients are in our Jet Pilot (well, except for the citrus). Instead we use the base components of cocktail ingredients to achieve similar flavors, like molasses instead of rum and botanicals like angelica root and star anise instead of spirits and syrups. The result is challenging to achieve but fun, and very delicious.

The Exotica series allows us to step outside of the brewhouse box and flex our culinary muscles by creating a beer that harnesses the complexity of a tiki cocktail, but with the character and drinkability of a beer. Each release is unique and well-balanced, like a cocktail.

Speaking of cocktails, enjoy this beer on the rocks with a garnish and a rum floater. It drinks like a fever dream.
